01 - Place the lemon on a clean cutting board.
02 - Using a sharp knife, trim off both ends of the lemon.
03 - Stand the lemon upright and cut crosswise into even rounds about 1/8 inch thick, adjusting thickness as desired.
04 - For wedges, cut the lemon in half lengthwise, then slice each half into segments.
05 - Use slices immediately or store in an airtight container in the refrigerator for up to 2 days.
