Roasted Carrots Honey Thyme (Printable)

# What You'll Need:

01 - 1.75 lbs peeled carrots, cut into uniform sticks or rounds

→ Glaze & Seasoning

02 - 2 tablespoons olive oil
03 - 2 tablespoons honey
04 - 1½ teaspoons fresh thyme leaves (or ½ teaspoon dried thyme)
05 - ½ teaspoon sea salt
06 - ¼ teaspoon freshly ground black pepper

→ Optional

07 - 1 tablespoon lemon juice
08 - 1 tablespoon chopped fresh parsley

# Directions:

01 - Set oven to 400°F and line a large baking sheet with parchment paper.
02 - In a large bowl, toss carrots with olive oil, honey, thyme, sea salt, and black pepper until evenly coated.
03 - Spread the coated carrots evenly in a single layer on the prepared baking sheet.
04 - Bake for 25 to 30 minutes, turning once halfway through, until tender and caramelized at the edges.
05 - Optional: Drizzle with lemon juice and sprinkle with fresh parsley just before serving.
