01 - Preheat the oven to 400°F. Line a baking sheet with parchment paper.
02 - Heat olive oil in a skillet over medium heat. Add chopped onion and sauté for 2 minutes.
03 - Add diced red bell pepper, zucchini, and minced garlic to the skillet. Cook, stirring occasionally, for 5 minutes until softened. Remove from heat and cool slightly.
04 - In a mixing bowl, combine the sautéed vegetables with cream cheese, grated cheddar, chopped parsley, dried oregano, salt, and pepper. Mix thoroughly.
05 - Roll out the puff pastry sheet and cut into 12 equal squares.
06 - Place a heaping teaspoon of filling in the center of each square. Fold the corners toward the center and pinch to seal, forming small parcels.
07 - Arrange the parcels seam side down on the baking sheet. Brush each parcel with the beaten egg.
08 - Bake in the preheated oven for 20 to 25 minutes, or until golden brown and puffed.
09 - Allow the bites to cool slightly before serving.
