# Directions:

01 - Preheat oven to 350°F. Line a roasting pan with foil or parchment paper.
02 - Pat turkey ham dry with paper towels and place in prepared pan.
03 - Whisk honey, Dijon mustard, brown sugar, apple cider vinegar, cinnamon, cloves, and black pepper in a small bowl until smooth.
04 - Using a sharp knife, score the ham’s surface in a criss-cross pattern about 1/2 inch deep.
05 - Brush half of the glaze evenly over the ham, working it into the scored cuts.
06 - Cover ham loosely with foil and bake for 40 minutes.
07 - Remove foil, brush remaining glaze over the ham, and bake uncovered for 15 to 20 minutes until caramelized and heated through.
08 - Remove from oven and let rest 10 minutes before slicing. Garnish with parsley and fruit slices if desired. Serve warm.

# Expert Advice:

01 -
  • The glaze caramelizes into this shiny, sweet-tangy shell that makes every slice look like it came from a magazine.
  • Turkey ham stays moist and forgiving, so you can chat with guests instead of worrying about dry meat.
  • Leftovers slice clean for sandwiches that taste better than anything from a deli counter.
02 -
  • Scoring the ham is not optional, I skipped it once and the glaze just pooled at the bottom of the pan instead of flavoring the meat.
  • Don't skip the resting time, slicing too early makes all the juices run out and you lose that tender texture.
  • If your glaze starts to darken too fast, tent the ham loosely with foil during the final bake.
03 -
  • Use a pastry brush with silicone bristles so the glaze doesn't clump or leave stray hairs behind.
  • Let the ham come to room temperature for 20 minutes before baking so it heats evenly and you don't end up with a cold center.
  • If you're doubling the recipe, make extra glaze, you'll want to brush it on everything by the time you're done.
