Balsamic Blackberry Bliss Grilled Cheese (Printable)

Toasted sourdough layered with brie, sharp cheddar, fresh blackberries and a honey-balsamic glaze.

# What You'll Need:

→ Bread and Fillings

01 - 4 slices sourdough bread
02 - 2 tablespoons unsalted butter, softened
03 - 4 ounces brie cheese, sliced (or substitute cream cheese for a milder profile)
04 - 1/2 cup fresh blackberries, halved
05 - 2 ounces sharp white cheddar cheese, shredded

→ Balsamic Glaze

06 - 2 tablespoons balsamic vinegar
07 - 1 teaspoon honey

# Directions:

01 - Combine balsamic vinegar and honey in a small saucepan over medium heat. Simmer for 3 to 5 minutes, stirring occasionally, until slightly thickened. Remove from heat and allow to cool briefly.
02 - Spread softened butter on one side of each bread slice. Arrange two slices, butter-side-down, on a clean work surface.
03 - Layer brie slices evenly onto the bread, followed by the shredded cheddar cheese and blackberry halves. Drizzle each with approximately 1 teaspoon of the balsamic glaze.
04 - Place the remaining two bread slices on top, butter-side-up, to complete each sandwich.
05 - Heat a nonstick skillet or griddle over medium heat. Add the assembled sandwiches and cook for 3 to 4 minutes per side, pressing gently, until the bread is crisp and golden brown and the cheeses have melted.
06 - Remove sandwiches from the skillet. Let rest for 1 minute, then slice and serve while warm.

# Expert Advice:

01 -
  • Once you taste melted brie and sweet blackberries wrapped in crisp bread, you'll never see grilled cheese the same way again.
  • The quick homemade balsamic glaze is the shortcut to a gourmet vibe — and your tastebuds will notice.
02 -
  • If you rush the glaze or use high heat, it'll burn and taste bitter instead of luscious.
  • Don't overload the sandwich, or you'll lose all the cheese (and good mood) out the sides.
03 -
  • Warm the cheese slices ahead so they melt right on cue with the bread.
  • If you have leftover glaze, save it — it's magic on roasted veggies or even ice cream.
