01 - Preheat oven to 400°F. Lightly grease a baking dish with 1 tablespoon olive oil.
02 - Pat cod fillets dry with paper towels and arrange them in the greased baking dish.
03 - In a bowl, combine breadcrumbs, Parmesan, parsley, garlic, lemon zest, salt, and black pepper. Stir in olive oil until mixture is evenly moistened.
04 - Spoon and gently press breadcrumb mixture evenly over each cod fillet.
05 - Bake for 18 to 20 minutes until cod is opaque and flakes easily with a fork, and topping is golden brown.
06 - Serve immediately with lemon wedges.
